I think there was something wrong with my tests machines as the migration went much faster and especially since I have disabled throttling. Point solved 
Regarding the reboot indeed I haven t noticed that restart option. In fact yes I had seen it but I think I might be doing too much things at the same time ...
Done 3 more test migrations with 2 different base layers on different hardware and unfortunately the outlook profile doesn t get migrated on any of my test laptops. However IE favorites, the desktop, wallpaper .. All this gets migrated. I don t really get it. Any idea ?
